Cherries in Red Wine
Cherries are one of the few fruits that cannot be replicated anywhere else in the world outside of season. They are a seasonal treat with “wintry” spices like cinnamon.
- 2.2 lbs cherries (frozen)
- 1 cup red wine
- ¾ cup sugar and spices
- 3/4 tsp cinnamon
- 5 cloves
- Pinch of mulling spices
Bring to a slow boil wine, sugar and spices. Add cherries and poach slowly for five minutes, then remove from heat, jar and store in refrigerator.
